1. Preheat oven to 425°F. Pat dry 1.5 lb chicken wings, separate at joints. 2. Toss wings with 1 tbsp olive oil and 1 tsp salt in a single layer on a rimmed baking sheet. Roast 35-40 minutes, turning halfway, until skin is crispy and internal temp reaches 175°F. 3. Meanwhile, thinly slice 2 cups romaine lettuce and 1 cup celery sticks. 4. In a small bowl, mix 0.5 cup plain yogurt, 2 tbsp hot sauce, 1 tsp garlic powder, and pinch of salt for dressing. 5. When wings are done, let rest 5 minutes. Toss wings with 0.25 cup melted butter and 2 tbsp hot sauce until coated. 6. Arrange lettuce and celery on plates. Top with wings. Drizzle dressing over salad. 7. Finish with a squeeze of fresh lemon juice.
